Banana Loaf

Ingredients
  • 3 ripe bananas, as ripe as possible
  • 100g sugar
  • 100g butter
  • 2 eggs
  • 290g self-raising flour
  • 1/2 tsp of bi-carbonate of soda
  • 1 teaspoon cinnamon or mixed spice
Perfect recipe for using up very ripe bananas. Why not bake 2, 1 to eat now, 1 for the freezer!

Method
1.
Preheat oven to 180 degrees C. Prepare your loaf tin by greasing it with butter then lightly sprinkling over some flour (to stop the load sticking).

Put the bananas on a chopping board or in a bowl and squash completely with a fork, put aside.

Using an electric whisk, cream together the butter and sugar until pale and smooth.
4.
Gradually add the egg, always adding a large pinch of flour at every addition and whisk together.
5.
Sieve in the flour with the spice and bi-carbonate of soda and fold into the egg mixture with a large spoon then add the bananas and blend until smooth. Bake for approx. 45 minutes.
Pro tip:

Adding a little flour when mixing in fat helps to prevent the mixture from curdling
