A 'slaw' that's loved by kids

Apple & Carrot Slaw

  • 3 carrots
  • 1 apple
  • 2 tbsp olive oil
  • 1/2 lemon
  • A pinch of salt & pepper
  • A handful of parsley
A zesty slaw without the onion

Serves 4 as a side
Peel the carrots then grate them and the apple into a salad bowl
Cut the lemon in half, then squeeze the juice from one half into the salad bowl, with the olive oil
Finely chop the parsley using a knife, or scissors. Sprinkle over the salad then mix through with some salt and pepper
Pro tip:

Swap the parsley with coriander or any other fresh herb you have leftover in the fridge
